| Chicken, Litchi and Basil Salad |

Delicious and oh, so refreshing!
Serves 4-6
Prep 15 min Cook 15 min
1 cup (250ml) chicken stock
4 chicken breast fillets
150g mixed lettuce leaves
100g litchis, peeled and stoned
200g cherry tomatoes, halved
1 large handful fresh basil
leaves, torn
¼ cup (60ml) French or
balsamic salad dressing
1 Heat the stock in a pan, add
the chicken breasts, bring to
the boil and then immediately
turn off the heat. Cover the
pan with a lid and leave the
breasts to gently poach and
allow the chicken to cool in
the liquid.
2 Once the chicken is cool
enough to handle, pull into
bite-sized strips.
3 Arrange the salad leaves on a
plate and top with the litchis,
cherry tomatoes and basil.
4 Drizzle the dressing over the
salad and enjoy!
