| Chicken Baked with Green Olives and Tomatoes |

An easy dish full of Mediterranean flavours…
Serves 4
Prep 10 min Cook 40 min
YOU’ll NEED 8 chicken pieces 2 tbsp (30ml) olive oil
salt and pepper, to taste 5 cloves garlic or 3 young
garlic bulbs a few sprigs fresh oregano, thyme and/or
rosemary 1 cup (250ml) stuffed green olives
4-6 medium tomatoes
1 Preheat oven to 200°C.
2 Toss the chicken pieces in the oil, season with salt and
pepper and arrange in a roasting pan.
3 Scatter the garlic cloves or bulbs and herbs over the
chicken.
4 Roast in a hot oven for 25 minutes and then add the
olives and tomatoes to the dish.
5 Continue roasting for another 10-15 minutes, or until the
chicken is golden and cooked.
