CHILLI CON CARNE

Serves 4 Prep 8 min

Cook 30 min
1 tbsp (15ml) olive or avocado oil
1 red onion, chopped
1 clove garlic, crushed
500g beef mince
1 tsp (5ml) chilli powder
½ tsp (2.5ml) cayenne pepper
1 x 410g tin chopped tomatoes
1 tbsp (15ml) tomato purée salt and black pepper, to taste
1 x 410g tin kidney beans, drained and rinseddiced red onion, tomato, avocado and fresh coriander leaves, to serve

1 Heat the oil in a pan and fry the onion
and garlic for 5 minutes over a low
heat.

2 Increase the heat and add the mince.
Cook for 5 minutes, breaking up the
mince as you stir.

3 Stir in the chilli powder and cayenne
pepper, then cook for 1 minute before
adding the chopped tomatoes and
tomato purée. Reduce the heat and
simmer for 15-20 minutes.

4 Season to taste with salt and pepper
and stir in the kidney beans.

5 Serve with crusty bread rolls or on a
bed of white rice, topped with diced
red onion, tomato, avocado and
coriander leaves.grated
