Ginger and Chilli Steamed Hake

A delicious fresh dish, bursting with authentic flavour!


Serves 4

Prep 10 min Steam 10 min

4 hake portions
2 red chillies, deseeded and finely
sliced
2cm piece ginger, grated
2 cloves garlic, grated
splash of lemon juice
salt and pepper
handful sliced spring onions
1 tbsp (15ml) green tea

1 Place the 4 hake portions
inside a wax paper-lined
steam basket. Mix together the
chopped chillies, grated ginger,
garlic, lemon juice and salt and
pepper. Sprinkle over some
spring onions.
2 Spoon some of the mixture
onto each fish portion and rub
to coat.
3 To steam, bring some water to
the boil in a large pot and add
the green tea. Place the steam
basket inside (not touching the
water) and turn down the heat
to a slow simmer.
4 Steam for 10 minutes, until
cooked and serve with noodles
or rice.
