Quick and easy Mother’s Day desserts!

Life can be complicated, but treating your mom on Mother’s Day doesn’t have to be.

Here’s a trio of simple but thoughtful quick and easy Mothers Day desserts to celebrate mom and give her some much needed down time. Snowflake’s special Mother’s Day recipes take no more than 30 minutes to prepare and are packed with freshness and flavour.

Banana pecan crumpets

Crumpets topped with chopped bannana and pecans

For flavour packed crumpets, try this delicious banana and pecan combination.

Prep time: 15 minutes

Baking time: 15 minutes

Total time: 30 minutes



500 g Snowflake Easymix Flapjack Mix

30 ml cooking oil

2 extra-large eggs

500 ml milk

1 medium banana, mashed

Extra banana slices to decorate

25 g pecan nuts, finely chopped

Cooking oil or butter for frying



  1. Prepare the Snowflake Easymix Flapjack mix as directed on the pack to create the batter. Add the mashed banana and nuts to the batter.
  2. Leave to stand for about 20 minutes. If the batter is too thick, add a little extra milk.
  3. Heat the oil in a large, heavy-based frying pan. Spoon heaped tablespoonfuls of the batter into the pan and fry on each side. When bubbles appear on the surface, turn over and fry on the other side until golden brown.
  4. Remove from the oil and drain on paper towel. Serve immediately with syrup, banana slices and a sprinkling of nuts.

Mini chocolate cups

Whip up bite-sized, fudgy creations mom will find hard to resist.

Prep time: 20 minutes

Baking time: 7 minutes

Total time: 27 minutes



500 g Snowflake Easymix Chocolate Muffin mix

2 extra-large eggs

200 ml water

160 ml cooking oil

5 ml vanilla essence


For the chocolate butter icing

60 g butter or margarine, softened

130 g icing sugar, sifted

30 ml cocoa powder

3 ml vanilla essence

About 15 ml milk

Grated dark chocolate to garnish



  1. Prepare the Snowflake Easymix Chocolate Muffiin mix as directed on pack, adding the vanilla essence to the wet ingredients.
  2. Spoon mixture into mini paper cups, filling each about two-thirds full.
  3. Bake in a preheated oven at 180˚C for about 7 minutes. Turn out onto a wire rack to cool.
  4. For the icing, beat the butter and icing sugar together. Add the remaining ingredients and beat to a smooth, spreadable consistency. Pipe the icing onto the mini cups and top with grated chocolate.

Make sure mom’s morning tea is extra special with deliciously warm, homemade Chelsea buns.


Prep time: 10 minutes

Baking time: 20 minutes

Total time: 30 minutes



500 g Snowflake Easymix Scone Mix

2 extra-large eggs

100 ml cooking oil

160 ml milk

30 g butter

100 g raisins

1 tsp finely grated lemon zest

2 tsp ground cinnamon

50 g soft brown sugar


For the icing

1 cup icing sugar

1 tbsp warm water



  1. Prepare the Snowflake Easymix Scone mix as instructed on pack.
  2. Roll out the scone dough and add the raisins and lemon zest.
  3. Roll the dough into a sausage shape and slice into even rounds.
  4. Brush each piece with melted butter and sprinkle with cinnamon sugar.
  5. Spread the icing onto the bottom of a casserole dish and place the rounds of dough on top.
  6. Bake for 20 minutes or until lightly browned. Allow to cool before flipping the dish onto a cutting board. Sprinkle with more cinnamon sugar if desired.
