Candied bacon popcorn
Serves 4 | Takes 20 mins + cooling
- 125g streaky bacon
- 310ml brown sugar
- 110ml golden syrup
- 125ml butter
- 5ml bicarbonate of soda
- 1.5L popped popcorn
- Preheat oven to 200°C. Line a baking tray with baking paper. Place the bacon on the baking tray, sprinkle with 60ml of the sugar and drizzle with 30ml of the syrup. Cook for about 20 minutes, turning after 10 minutes, until golden brown and caramelised. Set aside.
- Bring the remaining sugar, butter and syrup to a boil, lower heat and simmer for 5 minutes. Add bicarb and stir until combined. Leave to cool slightly. Toss the caramel through the popcorn.
- Chop the bacon into bite-size pieces and toss through the popcorn.
Bacon-wrapped veggie bundles
Serves 6 | Takes 40 mins
Preheat oven to 200°C. Fry 250g sliced streaky bacon for 2-4 minutes or until cooked but not crispy. Remove from pan, reserving the fat from the bacon. Set a bowl of ice water aside. Cook a variety of 500g green vegetables (like
broccolini, thinly sliced baby marrows, green beans, asparagus) in salted boiling water for about 2 minutes. Drain and plunge into ice water for 2 minutes. Mix through the bacon drippings and season. Make small vegetable bundles and wrap with streaky bacon. Place on a large baking tray. Roast for about 20 minutes or until golden brown and crispy.
Serves 6 | Takes 10 mins
Fry 125g streaky bacon slices on medium-high for 5-8 minutes or until golden brown and crispy. Remove from the pan, chop and cool. Combine 2 chopped avocados, juice of 1 lime, 3ml ground cumin, ½ chopped red onion, 1 chopped green jalapeño (optional), 125g diced cherry tomatoes and bacon. Season.
Serves 8 | Takes 25 mins
Fry 500g chopped bacon in a medium saucepan on medium-high for 8-10 minutes or until crispy and golden brown. Set aside. Sauté 1 chopped onion and 2 crushed garlic cloves. Add 5ml smoked paprika and fry for another minute. Add 125ml whisky, 125ml maple syrup, 60ml balsamic vinegar and 125ml brown sugar. Stir until the sugar has dissolved. Add the bacon and bring to a boil, lower heat and simmer for 10 minutes or until thickened.
Serves 4 | Takes 10 mins
Fry 4 slices streaky bacon on medium-high for 5-8 minutes or until golden brown and crispy. Remove and chop finely. Pour the fat from the pan into a bowl. Add 125ml softened butter and 30ml maple syrup. Stir until well combined. Add the bacon and stir until combined. Serve as a condiment or on toast.
