Serve breakfast to a crowd with this baked scrambled egg station – perfect for fussy eaters to build their own.

FOR THE BAKED SCRAMBLED EGG
- soft butter, for greasing
- 16 eggs
- 250ml cream
- 250ml Cheddar, grated
- fried mushrooms, cherry tomatoes, crispy bacon, cooked corn, smoked salmon, harissa paste, sweet chilli sauce, chopped chives and baby leaves
- 8 bagels or croissants
- Preheat oven to 200°C. Grease a 20cm x 28cm ovenproof dish with butter. Beat together the eggs and cream. Season. Pour into prepared dish. Bake for about 20 minutes, stirring every 5 minutes until almost set. Don’t overcook! Sprinkle over cheese and bake for about 5 minutes or until melted.
- Serve immediately with a selection of veggies, meats and dips for guests to mix their own scramble to serve with bagels or croissants.
Health fact: Get the day off to a good start with eggs for breakfast. The high protein content will keep you fuller for longer, helping with weight management and stabilising blood sugars.
