This balsamic roasted sausages and cherry tomatoes dish is quick and easy for if you're looking to serve up a quick dinner in the week.

INGREDIENTS

  • 12 small pork sausages
  • handful thyme
  • 250g brown mushrooms
  • 3 handfuls cherry tomatoes
  • 3 tomatoes, quartered
  • 15ml olive or avocado oil
  • 30ml balsamic vinegar
  • ½ ciabatta, torn into bite-size pieces
  • handful basil

METHOD

  1. Preheat oven to 220°C. Place sausages in a roasting tin with the thyme and bake, uncovered, for
    about 10 minutes.
  2. Add the mushrooms and tomatoes and drizzle with the oil and balsamic. Bake for about 10 minutes or until the sausages are golden brown and cooked.
  3. Remove from oven, scatter the ciabatta pieces over and bake for about 5 minutes or until golden brown and crisp on the outside. Serve with basil.
