These basic vanilla cookies make teatime an absolute pleasure!

- 180ml castor sugar
- 200g soft butter
- 1 egg
- 5ml vanilla essence
- 580ml cake flour
- pinch salt
- Beat the sugar and butter until pale. Add the egg and vanilla and mix through. Sift the flour and salt over and stir through. Shape into a flat disk, cover and rest in the fridge for about 30 minutes or until firm.
- Preheat oven to 160°C. Line baking trays with silicone pads or baking paper. Roll the dough out on a lightly floured surface to 4mm thickness and cut into 4.5cm hearts with a cookie cutter. Reroll offcuts once.
- Place on the prepared trays and bake in batches for about 8-10 minutes or until light golden. Leave to cool on the tray.
Dust with icing sugar or decorate with marble fondant.
