Boost your fibre intake with these classic bran muffins. Serve with jam and cheese.

INGREDIENTS

  • 375ml All-bran cereal
  • 250ml plain yoghurt
  • 80ml sunflower oil
  • 1 egg
  • 160ml brown sugar
  • 5ml vanilla essence
  • 250ml self-raising flour
  • 5ml bicarbonate of soda
  • pinch salt
  • 125ml raisins

METHOD

  1. Preheat oven to 180°C. Line a standard muffin pan with cupcake cases. Blitz the cereal until fine and mix through the yoghurt. Set aside for 10 minutes.
  2. Beat together oil, egg, sugar and vanilla and add to the yoghurt mixture. Sift together flour, bicarb and salt over the mixture and fold in. Stir in raisins and spoon into prepared cups.
  3. Bake for about 20 minutes or until cooked when tested with a skewer. Cool.
