chai spiced lamingtons

Take high tea even higher with these delicious chai spiced lamingtons.

  • 500ml cake flour
  • 10ml baking powder
  • 3ml bicarbonate of soda
  • 15ml chai spice mix
  • pinch of salt
  • 250ml sugar
  • 180ml sunflower oil
  • 100g soft butter
  • 15ml vanilla essence
  • 3 eggs
  • 375ml buttermilk


  • 750ml icing sugar, sifted
  • 250ml hot milk
  • 80g butter
  • 5ml chai spice mix


  • 500ml desiccated
  • coconut, toasted


  1. Preheat the oven to 180˚C. Line the base and sides of a 24cm square tin with baking paper.
  2. Sift together the flour, baking powder, bicarb, salt and spice. Mix in the sugar. Beat together oil, butter, vanilla, eggs and buttermilk. Pour the wet ingredients into the dry ones and stir to combine.
  3. Pour the batter into the prepared tin and bake for about 40 minutes, until a testing skewer inserted comes out clean. Allow to cool in the tin. Trim the sides, then cut into 25 squares.
  4. To make icing, mix all the ingredients until combined well. 5 Dip each square in the icing to coat all over,
    shake off the excess and roll in the coconut.



Make your own chai spice mix: combine 15ml ground cinnamon, 10ml ground cardamom, 5ml ground ginger, 3ml allspice, pinch ground cloves and pinch ground nutmeg.
