Creamy Seafood Stew

  • 15ml olive or avocado oil
  • 2 onions, chopped
  • 4 celery sticks, thinly sliced
  • 3 garlic cloves, crushed
  • 1L fish stock
  • 30ml cornflour
  • 30ml water
  • 1kg seafood mix, thawed
  • handful dill, chopped
  • 160ml sour cream
  • zest and juice of 2 lemons
  • toasted garlic bread, to serve


  1. Heat the oil on medium and sauté the onion, celery and garlic. Add the fish stock. Mix the cornflour with the water until a paste forms. Add to the stew and simmer for about 5-10 minutes, stirring until thickened.
  2. Add the seafood mix and the dill. Simmer for about 5 minutes until heated through. Stir in the sour cream, lemon zest and a squeeze of lemon juice. Season. Serve with the toasted garlic bread
