Falafel Salad Wraps

Use your cupboard staples to whip up these Falafel Salad Wraps - perfect as a weekday meal.

INGREDIENTS

FOR THE FALAFELS

  • 30ml olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 400g tin chickpeas, drained
  • 5ml ground cumin
  • 5ml ground coriander
  • 15ml peanut butter
  • 125ml breadcrumbs
  • handful parsley, chopped
  • 1 egg

FOR THE WRAP

  • 125g cherry tomatoes, chopped
  • handful coriander, chopped
  • 100g cos lettuce
  • 125ml crème fraîche

METHOD

  1. Heat 15ml of the oil on medium-high and sauté the onion and garlic.
  2. Blitz the onion mixture, chickpeas, cumin, coriander, peanut butter, breadcrumbs, parsley and egg until the mixture comes together. Season. Shape the mixture into 8 oblong rolls.
  3. Heat the remaining oil on medium. Fry the falafels for 3 minutes on each side or until golden brown.
  4. For the wraps, combine the tomatoes and coriander. Serve the falafels on lettuce with the tomato mixture and crème fraîche on the side.
