  • 125ml (½ cup) dried fruit, chopped
  • 250ml (1 cup) ground almonds
  • 180ml (¾ cup) cake flour
  • 5ml (1t) ground cinnamon
  • 5ml (1t) baking powder
  • pinch salt
  • 125ml (½ cup) honey
  • 50g butter, melted
  • 3 egg whites

For the topping

  • 30ml (2T) sugar
  • 3ml (½ t) ground cinnamon


  1. Grease 4 microwave-safe cups. Mix together the fruit, almonds, flour, cinnamon, baking powder and salt. Make a well in the centre and stir in the honey, butter and egg whites. Divide between the prepared cups.
  2. For the topping, combine the ingredients and sprinkle over the muffins. Microwave on high for about 90 seconds until just cooked, taking care not to overcook.
