If you like Christmas cake and mince pies, these fruit and nut bars are for you.
- 15 mins + cooling
- Makes about 30
- 125g butter
- 385g tin condensed milk
- 250ml soft brown sugar
- 5ml vanilla essence
- 160ml dates, chopped
- 2 x 200g packets ginger biscuits, crushed
- 375ml fruit cake mix
- 160ml glacé cherries, halved
- 100g pecan nuts, chopped
Line a 25cm x 35cm baking tray with baking paper. Heat the butter, condensed milk, sugar and vanilla on medium until melted. Remove from heat and add the remaining ingredients. Mix until well combined. Press into the prepared tray and refrigerate until firm. Cut into bars.
