These fruity muesli muffins are a great way to enjoy your morning muesli on the run.

INGREDIENTS

  • 625ml self-raising flour
  • 180ml brown sugar
  • 5ml ground cinnamon
  • pinch of salt
  • 12 dates, pitted and chopped
  • 500ml fruity muesli
  • 125ml sunflower oil
  • 180ml milk
  • 2 eggs
  • 15ml vanilla essence
  • 750ml green apple, peeled and grated

METHOD

  1. Preheat oven to 180°C. Line 2 jumbo muffin trays with 11 x 180ml paper cups. Combine the flour, sugar, cinnamon, salt, dates and 375ml of the muesli. Add the remaining ingredients and mix until just combined.
  2. Divide the mixture between the cups and sprinkle remaining muesli over. Bake for about 25 minutes or until cooked when tested with a skewer. Cool. Serve warm or at room temperature.
