These garlic mushroom and pesto snackwiches are the perfect Meat-free Monday meal!
- 30 mins
- olive oil, for frying
- 250g mushrooms, sliced
- 1 garlic clove, crushed
- 8 slices white bread
- butter, for spreading
- 200g mozzarella, grated
- 30ml basil pesto
- Heat a splash of oil on high and fry the mushrooms until golden. Mix through the garlic and fry for 1 minute. Season.
- Butter the bread slices on the outside. Sandwich two slices together with cheese, mushrooms and pesto. Toast in a snackwich pan for about 3 minutes or until golden.
Optional: Serve scattered with pecorino and basil.
