These garlic mushroom and pesto snackwiches are the perfect Meat-free Monday meal!

INGREDIENTS

  • olive oil, for frying
  • 250g mushrooms, sliced
  • 1 garlic clove, crushed
  • 8 slices white bread
  • butter, for spreading
  • 200g mozzarella, grated
  • 30ml basil pesto

METHOD

  1. Heat a splash of oil on high and fry the mushrooms until golden. Mix through the garlic and fry for 1 minute. Season.
  2. Butter the bread slices on the outside. Sandwich two slices together with cheese, mushrooms and pesto. Toast in a snackwich pan for about 3 minutes or until golden.

Optional: Serve scattered with pecorino and basil.
