INGREDIENTS

FOR THE TZATZIKI

  • ½ cucumber, seeded and grated
  • 180ml plain yoghurt
  • 1 garlic clove, crushed
  • 5ml ground cumin
  • small handful mint, chopped

FOR THE BURGERS

  • 4 chicken breasts, butterflied
  • 240g Halloumi cheese,
  • squeeze of lemon juice
  • olive or avocado oil, to fry
  • 4 hamburger buns, halved
  • watercress, to serve
  • oven-baked chips, to serve

METHOD

  1. For the tzatziki, squeeze excess moisture out of the cucumber and mix together with the other ingredients. Keep in the fridge.
  2. Heat a griddle pan on medium high, brush the chicken with oil and cook for about 5 minutes each side until done. Season. Drizzle oil over the buns and cook, cut side down for about 2 minutes until charred. Alternatively, braai over medium hot coals.
  3. Heat a thin layer of oil in a frying pan on medium and fry the Halloumi until golden. Drizzle the lemon juice over. Make burgers with the buns, Halloumi, chicken, tzatziki and watercress. Serve with the chips.
