- 2 whole pineapples
- fresh mint, to serve
- Slice the pineapples into 12 x 10cm x 3cm fingers and skewer them onto a long skewer.
- Fill a large bowl with crushed ice and place the pineapple skewers inside the ice. Serve chilled with fresh mint.
