INGREDIENTS

  • 4 egg whites
  • 45g Parmesan, finely grated
  • olive oil, for shallow frying

METHOD

FOR THE TOPPING

  • 125g cream cheese, softened
  • small handful each of parsley, chives, dill, chopped
  • 100g smoked salmon ribbons

Variation 

These puffs are delicious on their own, but also make a lovely base for toppings like cream cheese and salmon.
