Make a batch of these low-carb mini ham quiches to grab on-the-go!

INGREDIENTS

  • 12 slices country ham
  • 100g cherry tomatoes, halved
  • 100g Cheddar, grated
  • 2 small baby marrows, grated
  • 3 eggs
  • 375ml cream
  • handful parsley

METHOD

  1. Preheat oven to 180°C. Line a 12-hole muffin pan with slices of ham.
  2. Divide the cherry tomatoes, Cheddar and baby marrows among the muffin holes.
  3. Whisk together the eggs, cream and parsley. Season and pour into the muffin holes.
  4. Bake for about 20 minutes or until golden brown and puffed.
