This one-pan creamy chicken is a delicious low-carb dish the whole family will love.
- 30 mins
- 3 chicken breasts
- 30ml butter
- lemon juice, to taste
- ½ onion, chopped
- 2 garlic cloves, crushed
- 250ml cream
- 60ml pecorino, finely grated
- handful broccolini
- Cut each chicken breast open into two fillets. Season. Heat the butter in a large frying pan on high and fry the chicken for about 3 minutes on each side or until browned. Squeeze over lemon juice. Add the onion and garlic and fry until golden.
- Reduce heat to medium, add the cream and bring to a boil. Add the pecorino and simmer until melted.
- Stir in broccolini. Cover and cook for about 3 minutes or until tender.
Optional: Serve with cauliflower rice, if you like.
