one-pan creamy chicken

This one-pan creamy chicken is a delicious low-carb dish the whole family will love.

INGREDIENTS

  • 3 chicken breasts
  • 30ml butter
  • lemon juice, to taste
  • ½ onion, chopped
  • 2 garlic cloves, crushed
  • 250ml cream
  • 60ml pecorino, finely grated
  • handful broccolini

METHOD

  1. Cut each chicken breast open into two fillets. Season. Heat the butter in a large frying pan on high and fry the chicken for about 3 minutes on each side or until browned. Squeeze over lemon juice. Add the onion and garlic and fry until golden.
  2. Reduce heat to medium, add the cream and bring to a boil. Add the pecorino and simmer until melted.
  3. Stir in broccolini. Cover and cook for about 3 minutes or until tender.

Optional: Serve with cauliflower rice, if you like.
