Fill up the biscuit jars with these melt-in-the-mouth macadamia cookies.
- 30 mins + cooking
- Makes about 18
- 120g soft butter
- 80ml sugar + extra
- pinch salt
- 10ml vanilla essence
- 250ml cake flour
- 180ml macadamia nuts, finely chopped
- Preheat oven to 180°C. Beat together the butter, sugar, salt and vanilla until creamy. Fold in flour until it just comes together. Fold in nuts.
- Shape into 15ml balls and roll in extra sugar. Place on baking paper lined trays, leaving spaces in between. Bake for about 12 minutes or until just cooked. Cool.
