INGREDIENTS

  • 1L milk
  • 160ml cake flour
  • 3ml salt
  • 30ml butter + extra
  • cinnamon sugar, to serve

METHOD

  1. Microwave the milk for about 10 minutes until steaming hot.
  2. Mix together flour and salt, then rub in the butter until it forms fine crumbs.
  3. Whisk flour mixture into hot milk until small lumps form. Microwave for about 4 minutes, until cooked and thickened. Whisk again.
  4. Serve sprinkled generously with cinnamon sugar and knobs of extra butter.

Variation

For spiced ’melkkos’, add 3 star anise, 1 cinnamon stick and 15ml crushed cardamom pods to the milk before heating. Remove spices before adding the flour mixture. Stir 10ml vanilla essence at the end of step 3.
