‘Melkkos’ ('milk food') is a proudly South African comforting, porridge-like meal that can be enjoyed as a breakfast, supper or even a pudding. Try our easy microwave ‘melkkos’ version.

- 1L milk
- 160ml cake flour
- 3ml salt
- 30ml butter + extra
- cinnamon sugar, to serve
- Microwave the milk for about 10 minutes until steaming hot.
- Mix together flour and salt, then rub in the butter until it forms fine crumbs.
- Whisk flour mixture into hot milk until small lumps form. Microwave for about 4 minutes, until cooked and thickened. Whisk again.
- Serve sprinkled generously with cinnamon sugar and knobs of extra butter.
For spiced ’melkkos’, add 3 star anise, 1 cinnamon stick and 15ml crushed cardamom pods to the milk before heating. Remove spices before adding the flour mixture. Stir 10ml vanilla essence at the end of step 3.
