Mini Ham and Corn Frittatas

These Ham and Corn Frittatas are delicious and easy to whip up, the kids will absoluteky love them.

  • 2 eggs
  • 125g tin creamed corn
  • 125ml milk
  • 80ml Cheddar, grated
  • 3 medium baby marrows, grated
  • 4 slices sandwich ham, thinly sliced


  1. Preheat oven to 180°C. Line a standard muffin tray with 8 silicone or paper cups.
  2. Combine all the ingredients and season. Pour mixture evenly into muffin cases. Bake for about 15 minutes or until firm. Leave to cool in tray for 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container in the fridge until required.

MAKE-AHEAD These keep well in the fridge for 3 days.

VARIATIONS Replace the ham with crispy diced bacon, tuna or shredded chicken. Replace the baby marrows with roasted veggies, peas or any of your kids’ favourite veggies.
