These Ham and Corn Frittatas are delicious and easy to whip up, the kids will absoluteky love them.

- 2 eggs
- 125g tin creamed corn
- 125ml milk
- 80ml Cheddar, grated
- 3 medium baby marrows, grated
- 4 slices sandwich ham, thinly sliced
- Preheat oven to 180°C. Line a standard muffin tray with 8 silicone or paper cups.
- Combine all the ingredients and season. Pour mixture evenly into muffin cases. Bake for about 15 minutes or until firm. Leave to cool in tray for 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container in the fridge until required.
MAKE-AHEAD These keep well in the fridge for 3 days.
VARIATIONS Replace the ham with crispy diced bacon, tuna or shredded chicken. Replace the baby marrows with roasted veggies, peas or any of your kids’ favourite veggies.
