Mini Sticky Toffee Puddings

  • 250g pitted dates, chopped
  • 80ml (1/3 cup) boiling water
  • 3ml (½ t) bicarbonate of soda
  • 80ml (1/3 cup) butter, melted
  • 80ml (1/3 cup) brown sugar
  • 2 eggs, beaten
  • 5ml (1t) vanilla essence
  • 80ml (1/3 cup) self-raising flour


  • 80ml (1/3 cup) brown sugar
  • 30ml (2T) butter
  • 15ml (1T) cream
  • whipped cream, to serve


  1. Heat the dates and water in the microwave for a minute until the dates are soft. Add the bicarb and let it sit for a minute before mashing roughly with a fork.
  2. Grease 4 microwave-safe cups. Mix together the butter, sugar, eggs and vanilla. Stir in the date mixture then fold in the flour. Divide between the prepared cups. Microwave on high for about 2 minutes until just cooked.
  3. For the toffee sauce, combine the sugar, butter and cream in a microwave-safe container. Microwave on high for about 90 seconds, stirring every 30 seconds until a dark toffee sauce forms. Drizzle over the puddings and serve with whipped cream.
