INGREDIENTS

FOR THE PATTIES

  • sunflower oil, for cooking
  • 250g mushrooms, sliced
  • 125ml cooked rice
  • 180g tofu, chopped
  • 30ml dry instant oats
  • 125ml beetroot, grated
  • 3ml smoked or plain paprika
  • 8ml nutritional yeast
  • 3ml garlic powder
  • 3ml onion powder
  • 3ml liquid smoke

FOR THE BURGER

  • 4 hamburger buns, cut open
  • handful baby leaves or lettuce, shredded
  • wholegrain mustard, for spreading
  • 2 tomatoes, sliced

METHOD

  1. For the patties, heat a splash of oil on high and sauté the mushrooms until golden and dry. Blitz with the remaining ingredients until it resembles mince. Season. Shape into 4 patties.
  2. Heat a splash of oil on high and fry patties for about 8 minutes or until golden.
  3. For the burger, drizzle cut sides of buns with oil and toast. Top with leaves, patties, mustard and tomato.
