Roast Lemon and Thyme Chicken

INGREDIENTS

  • 8 chicken pieces
  • 1 garlic bulb, broken into cloves, skin on
  • 2 lemons, cut into wedges
  • 45ml (3T) olive or avocado oil
  • handful thyme leaves
  • 6 potatoes, cut into
  • wedges, skin on
  • 8 salami slices
  • handful cherry tomatoes

METHOD

  1. Preheat the oven to 200ºC. Place the chicken pieces, skin side up, in a large oven tray.
  2. Lightly crush the garlic cloves and add them to the pan with the lemons, oil, thyme and potatoes.
  3. Season to taste and bake for 40- 50 minutes.
  4. Scatter the salami slices between the chicken. Add the tomatoes and bake until they start to soften and the chicken is cooked through.
