The perfect side to roasts - try this salsa salad at your next dinner party.

- 1 cucumber, halved lengthways
- 500g roma tomatoes, chopped
- 1 small red onion, sliced
- 2 avocados, diced
- handful coriander, chopped
- 30ml olive or avocado oil
- 45ml lemon juice
Scoop the pips from the cucumber and slice the flesh. Add the tomatoes, onion, avocado and coriander. Combine the oil and lemon juice and toss through. Season.
