INGREDIENTS

  • 2 basic pancake recipes

FOR THE CHEESE SAUCE

  • 120g butter
  • 80ml cake flour
  • 1.5L milk
  • 250ml Cheddar cheese

FOR THE LAYERS

  • 6 spring onions, sliced
  • 500ml cooked corn kernels
  • 160ml Peppadews®, chopped
  • handful mixed baby herbs or rocket

METHOD

  1. Follow the method for making the basic pancake recipe.
  2. For the cheese sauce, heat the butter in the same pan on medium until melted. Add the flour and stir to a smooth paste. Whisk in the milk and stir until the sauce has boiled and thickened. Stir in the cheese until melted. Season.
  3. Make a stack by layering the pancakes with cheese sauce and alternating the spring onions, corn and peppadews in between. Finish with a layer of cheese sauce and then rocket on top.
