seafood paella

Prepared and served in the same pan, this seafood paella dish is a special way to treat your guests.

INGREDIENTS

  • 30ml olive or avocado oil
  • 250g packet diced bacon
  • 2 onions, chopped
  • 2 garlic cloves, crushed
  • 410g tin chopped tomatoes
  • 1L fish stock
  • 250ml rice
  • 1kg seafood marinara mix, defrosted
  • 500ml peas
  • handful parsley, chopped
  • 3 lemons, cut into wedges

METHOD

  1. Heat oil on medium-high and fry the bacon until crisp. Add the onion and garlic and fry for about 5 minutes or until soft. Add the tomatoes and stock and bring to a boil. Season. Cook, stirring occasionally, for about 20 minutes or until rice is tender.
  2. Add the seafood and peas and cook for about 5 minutes or until cooked. Season. Add parsley and squeeze some lemon juice over to taste. Serve with the remaining lemon wedges.
