INGREDIENTS

  • 500ml oats
  • 1L water
  • pinch of salt
  • 1 cinnamon stick
  • 2 cardamom pods, crushed
  • 3ml ground ginger
  • 1 star anise
  • 15ml butter
  • 160ml evaporated milk

FOR THE CARAMELISED PEARS

  • 30ml butter
  • 60ml brown sugar
  • 125ml evaporated milk
  • pinch of salt
  • 3 pears, chopped
  • 5ml vanilla essence

 

  • plain yoghurt, to serve

METHOD

  1. Bring the oats, water, salt and spices to a simmer on a medium heat and cook for about 15 minutes, stirring occasionally, until the water has been absorbed.
  2. Stir in the butter and evaporated milk. Turn off the heat, cover and steam for 10 minutes.
  3. For the pears, stir the butter, sugar, evaporated milk and salt on medium high until dissolved.
    Bring to the boil and cook for about 5 minutes, until a golden caramel forms.
  4. Stir the pears and vanilla through the caramel and cook for about 2 minutes, until tender. Serve with
    the oats and dollops of yoghurt.
