INGREDIENTS

FOR THE CAKE

  • 120g butter, softened
  • 180ml brown sugar
  • 1 egg
  • 60ml sunflower oil
  • 8ml vanilla essence
  • 375ml cake flour
  • 3ml bicarbonate of soda
  • 3ml baking powder
  • pinch salt
  • 5ml ground cinnamon
  • 5ml ground allspice
  • 375ml pears, peeled, core and finely chopped

FOR THE CREAM CHEESE LAYER

  • 230g tub of softened cream cheese
  • 5ml vanilla essence
  • 45ml sugar

FOR THE TOPPING 

  • 180ml sugar
  • 60ml brown sugar
  • 125ml cake flour
  • 5ml ground cinnamon
  • 3ml ground ginger
  • 3ml baking powder
  • pinch salt
  • 100g cold butter, cubed

 

  • whipped cream, to serve

METHOD

  1. For the cake, preheat oven to 180°C. Grease a 20cm x 26cm tin. Beat the butter and sugar until creamy. Add the egg, oil and vanilla and mix until combined.
  2. Combine the flour, bicarb, baking powder, salt, cinnamon and allspice and stir into the butter mixture. Mix until just combined. Stir in the pears. Spread into the prepared pan.
  3. For the cream cheese layer, combine the cream cheese, vanilla and sugar. Gently spread over the cake batter in the tin.
  4. For the topping, combine all the dry ingredients and rub the butter in until well combined. Sprinkle over
    the cream cheese mixture.
  5. Bake for about 1 hour or until the topping has browned. Serve warm with whipped cream.
