Strawberry cheesecake fridge tart

This strawberry cheesecake fridge tart is a perfect dish to take to friends or have on standby in your fridge over the holidays.

INGREDIENTS

FOR THE BASE

  • 200g packet Marie biscuits, crushed
  • 100g butter, melted
  • 30ml sugar
  • 15ml golden syrup
  • 5ml vanilla essence

FOR THE CHEESECAKE FILLING

  • 15ml granulated gelatine
  • 125ml boiling water
  • 250ml cream
  • 250g tub smooth cottage cheese
  • 385g tin condensed milk
  • 60ml lemon juice
  • 5ml vanilla essence

FOR THE TOPPING

  • 80g packet strawberry jelly
  • 250g strawberries, sliced

METHOD

  1. For the base, blitz all the ingredients until fine. Press into the base of a 22cm x 35cm dish. Refrigerate.
  2. For the filling, dissolve the gelatine in the boiling water. Cool. Beat together all the remaining ingredients. Slowly pour the gelatine into the mixture while beating to prevent lumps from forming. Pour onto the base. Refrigerate for about 1 hour or until set.
  3. For the topping, prepare the jelly according to packet instructions. Cool to room temperature. Arrange strawberry slices on top of the set filling. Carefully pour the jelly on top over the back of a spoon. Refrigerate for at least 2 hours or until set.
