Toasted tuna melt

This toasted tuna melt is the answer to what to do with that tin of tuna in your grocery cupboard!

INGREDIENTS

  • 2 x 150g tins tuna chunks, drained
  • 125ml mayonnaise
  • 30ml gherkins, chopped
  • 10ml whole grain mustard
  • 6-8 slices sourdough bread
  • 250ml Cheddar, grated

METHOD

  1. Combine tuna, mayonnaise, gherkins and mustard. Spread over the bread and scatter with Cheddar. Toast under a hot grill for about 3 minutes until toasted and melted.

Optional:

Combine handful chopped cherry tomatoes, ¼ finely chopped red onion, small handful finely chopped parsley. Season. Serve scattered over the toasts with rocket.
