This toasted tuna melt is the answer to what to do with that tin of tuna in your grocery cupboard!

- Makes 6-8
- 2 x 150g tins tuna chunks, drained
- 125ml mayonnaise
- 30ml gherkins, chopped
- 10ml whole grain mustard
- 6-8 slices sourdough bread
- 250ml Cheddar, grated
- Combine tuna, mayonnaise, gherkins and mustard. Spread over the bread and scatter with Cheddar. Toast under a hot grill for about 3 minutes until toasted and melted.
Combine handful chopped cherry tomatoes, ¼ finely chopped red onion, small handful finely chopped parsley. Season. Serve scattered over the toasts with rocket.
