Triple-cooked chips

These Triple-Cooked Chips make a scrumptious entertaining snack for family and guests.

INGREDIENTS

  • potato or sweet potato
  • oil, to deep-fry
  • salt, to taste

METHOD

  1. Cook peeled, hand-cut potato or sweet potato chips in salted boiling water for about 8 minutes or until the outsides are soft, but the insides still firm. Drain on paper towel.
  2. Deep-fry in batches in hot oil for about 5 minutes or until light golden. Drain and cool for at least 10 minutes. Deep-fry again in hot oil for 5-7 minutes or until golden, crisp on the outside and fluffy on the inside. Drain on kitchen towel and sprinkle with salt.
