Royal icing acts as both glue and decoration in cake decorating.
Knowing how to make royal icing is an invaluable baking skill – it’s the easiest way to make an ordinary sugar biscuit look like it came out of a professional kitchen. And the best thing is, once you get the hang of it, it’s really easy!

- Takes 5 mins
- 330ml icing sugar, sifted
- 1 egg white
- 3ml lemon juice
HOW TO MAKE ROYAL ICING
