Knowing how to make royal icing is an invaluable baking skill – it’s the easiest way to make an ordinary sugar biscuit look like it came out of a professional kitchen. And the best thing is, once you get the hang of it, it’s really easy!

INGREDIENTS 

  • 330ml icing sugar, sifted
  • 1 egg white
  • 3ml lemon juice

HOW TO MAKE ROYAL ICING

  1. Beat together all the ingredients for about 5 minutes or until light and fluffy. The icing should have the consistency of toothpaste. If it’s too stiff, add more lemon juice, or if it’s too runny, add more icing sugar.
