- Place extra-large eggs in a bowl and cover with warm water for at least 10 minutes until warmed.
- Heat enough salted water to cover the eggs in a saucepan. Bring the water to boil, then lower the heat and gently add the eggs in a single layer. Cover and simmer for 4-5 minutes for soft, runny eggs; 7-8 minutes for medium; 13-14 minutes for hard boiled eggs.
- Remove the eggs and immediately place in a bowl with ice water to stop the cooking process. Cool completely.
- Gently tap each egg on the kitchen counter to form small cracks all over. Peel under a thin stream of cool running water, peeling from the wider side.
Tip: Warming the eggs first before boiling and using salt helps prevent the shells from cracking. Place your boiled egg in a glass with a little water, cup your hand over the top and shake vigorously. The shell will peel away easily. Older eggs are easier to peel than fresh eggs. Peeling an egg under a trickle of running water helps to separate the shell from the egg.
