Shaping windmills is a great technique to learn when making pastries.
- Cut pastry into squares.
- Make 4 incisions from the corner towards the middle, leaving the middle 1cm uncut.
- Fold the first cut triangle of each of the 4 corners in towards the middle to create a windmill.
- Place a pastry star or whatever shape you prefer in the middle.
