Shaping windmills

Shaping windmills is a great technique to learn when making pastries.

Here’s how:

  1. Cut pastry into squares.
  2. Make 4 incisions from the corner towards the middle, leaving the middle 1cm uncut.
  3. Fold the first cut triangle of each of the 4 corners in towards the middle to create a windmill.
  4. Place a pastry star or whatever shape you prefer in the middle.
